Simply put, you can adjust your output PSI, while on a non-adjustable you can not. More specifically though, this eliminates the need for an inline regulator, you can just use a gas through grip. You can run a spyder at 750 psi, but if you want to go LP, you will need to get it down, either using an adjustable tank, regulator, or both. A sidenote to this, is that adjustable tanks are often times better made (exlcluding the bulldog :) ) by a huge margin over non adjustable tanks, and so have a higher flow rate, and more consistent output pressures.
btw, the bulldog is a good tank, but I wouldnt consider it to be far greater than a crossfire or Pure energy non adjustable, it's about the same, that's why i excluded it from my explanation

I plan to go lp with my cocker but not anytime too soon, but Im getting a nitro tank very soon. What are some decent priced recommendations...?

Well, for around 180, you can get a fiber wrapped PMI Pure Energy 68ci 3000psi tank. I use it myself, and it works great for me, it is a screw in system, so you wont need to set up any more hoses, and fiber is very light. The pure energy is a fixxed output, but the recharge rate is very good, and when you do go LP just use an inline regulator (alot of cockers come with them) and set it to your desired pressure.

i personally like steel tanks better b/c theyre smaller. I didnt find too musch wieght differerence between my steel and my friends fiber. BTW what is the ci on the steel AA melee. I think it is 68 but it is a bit slimmer than the crossfire 68 steel ive seen. Mine looks exactly like the pic in the review. Thanks for your help.
