In HTML the apostraphe can be used as a delimeter. So, if you actually want to use the character apostraphe in a webpage, you have to put an escape character before it. (in this case the forward slash) vB is probably adding that character twice, once when you make the poll and again when the poll is displayed. Also, if you edit a poll it will increase the number of forward slashes.
For example...
Original: Mike's
In the poll: Mike\'s
First edit: Mike\\\'s
Second edit: Mike\\\\\\\'s
and so on...
This is because it adds a forward slash again for the apostraphe, then adds a forward slash for all of the forward slashes. (otherwise it would think that forward slash is an escape character... so it has an escape character to print the escape character)
If they just made it so that it only changes it when the poll is displayed, then it wouldn't have this problem. I don't know if they've fixed that for the new version, but I would assume so.
