Being a newbie, I need some info from you guys.

What makes one bolt better than another? What does the better bolt do different from the crappy one? What is the best bolt for a spyder clone? Why?

Better bolt have better flow capabilities. That means that it can get more air quicker to push the ball faster. Crappier bolts are crappy. A good bolt with hi flow if the aka lightining bolt.
